Our Olive Oils are personally sourced from Italy. In order to produce a great olive oil all the following elements must be combined: the soil where the trees are grown ( a vivily red colour is a good sign of iron and potassium), when and how they harvest the olives, how long it takes to from harvesting to crushing the fruits, the separation of the water from the olive oil itself commonly known as decantation, where the product is kept for storage and finally how is handled for shipping.
Only olives that are harvested when not fully ripe and crushed within few hours can produce an Olive Oil of low acidity and rich in organoleptic properties.
The professionalism of the "Contadino" where the nature already does is important part, a land where the soil is vividly red because rich in minerals like iron and potassium, can produce a final product that is the daily nutrition of all the Mediterranean countries.
