Benedetto Cavalieri started growing wheat in the region of Apulia in the South of Italy. The company was founded in 1918 and makes top quality artisanal pasta from locally grown durum wheat flour by manufacturing process called “delicate method” which involves long kneading, slow pressing, drawing and drying in a low temperature. Pasta shapes are made with bronze dies, which give a rough surface to the finished pasta allowing it to hold more sauce. The pasta has a flavour of quality durum wheat with natural chewy texture and high nutritional values of wheat retaining carbohydrates and proteins.
